BERRY COBBLER

This scrumptious recipe is perfect
for the month of July when boysenberries and blackberries are in season!
Ingredients:
6 cups washed and drained fresh boysenberries or blackberries
4 tablespoons flour
1 teaspoon cinnamon
½ cup butter (1 cube)
sugar to taste
Soft Crust Batter:
1½ cups dry buttermilk pancake mix
1½ cups sugar
1½ cups milk
Equipment:
9x13 baking dish
wire whisk
large mixing bowl
wooden spoon
1. Pour berries in baking dish.
Mix gently in flour, cinnamon, and
enough sugar to sweeten.
2. Break cube of butter into small
chunks and dot top of berries in
baking dish. Set aside.
3. Preheat oven to 350 degrees.
Soft Crust:
4. Mix together buttermilk baking
mix, sugar, and milk with wire
whisk until somewhat smooth like pancake batter.
5. Pour batter over berries.
6. Bake in 350 degree oven for one
hour or until crust is a soft brown color
and fruit is cooked.
7. Serve warm with vanilla ice cream.
